Eggplant Appetizer
This simple appetizer is a crowd-pleaser. You can be creative with the toppings you want to add on the top. I used zatar spice and guacamole but you can use smoked paprika and Jeff Novick taught us how to create healthy meals or a burger for that matter, just by using 5 basic ingredients - beans, oats, brown rice (or any starchy vegetable), tomatoes ( or liquid for moisture), and spices....
