Fruit and Nut Cake

Myrtle Kelly is a sweet lady – literally! She appeases us with her sweet treats at every support group meeting. Fruit and Nut cake was one of her trials which made us go nuts.


  1. Place a sauce pan on medium heat. Add 2 cups of water, raisins, and apricots. Cook for 10 mins with the lid covered.
  2. Preheat oven to 350F
  3. Line a 9×12 in. pan with parchment paper
  4. In a medium bowl combine all the dry ingredients- whole wheat flour, baking soda, sugar, salt, cinnamon and nutmeg powder
  5. In a separate large mixing bowl, pour the saucepan fruit mixture and combine all the wet ingredients –  applesauce and vanilla extract. Allow the mixture to cool.
  6.  Slowly incorporate the dry ingredients  and fold in into the wet ingredients.
  7. Fold in nuts
  8. Pour into pan and level. bake 35-40 min or until toothpick comes out clean.
  9. Cool the pan for about 30 minutes and then turn the cake out of the pan. Cool completely before slicing. Enjoy!



1/3 cup dried apricots, chopped
1/3 cup raisins
2 cups water
1/2 cup apple sauce (GOH)
1 tsp vanilla extract
1 & 3/4 cup sprouted whole wheat flour
1/4 cup sugar
1 tsp baking soda
1/2 tsp cinnamon powder
1/2 tsp nutmeg powder
1/2 tsp salt
1/4 cup walnuts, chopped
1/4 cup almonds, chopped
1/4 cup pecans, chopped
1/4 cup cashews, chopped
