Waffle Fruit Cake





What can be a better way of celebrating Spring and Easter than indulging in a crisp yet soft, fluffy and easy to make cake.

Drumroll please… Introducing Gift of Health Waffle Fruit cake.

Below you will find instructions to make the waffles, cream and how to assemble it


  1. Soak the cashews: Soak the cashews in water for at least a few hours to soften.
  2. Soak The Dried Mango: Cover dried mango pieces with water for rehydration.
  3. Make the Waffles:
  • In a mixing bowl, whisk together the waffle ingredients.
  • Let the batter sit for 7-10 minutes. You can add 1 cup frozen blueberries or few dairy free chocolate chips to the batter
  • Use a round waffle iron griddle. Preheat it to 375°F.
  • Pour one scoop of waffle batter onto the preheated plates, spreading it evenly. Close the lid.
  • Cook for 5 minutes or until the waffles are golden and crisp.
  • Once cooked, waffles will easily peel off. Make 3 waffles

4. Make Mango Cashew Cream:

  • Drain and discard the water from the soaked cashews.
  • In a high-powered blender, combine cashews, maple syrup, vanilla, and rehydrated mango (including water). Add 1 to 1.5 cups of water while blending to a smooth consistency. 
  • You want the cream to be little thick 

5. Assemble Waffle Cake:

  • Take one waffle and spread a layer of mango cream over the surface.
  • Add sliced Bosc pears and kiwi on top.
  • Place another waffle on top, layer with mango cream, add sliced persimmon and banana.
  • Add the third waffle on top, generously layer with mango cream, and decorate with berries and nuts.
  • You can make as many layers as you want. Enjoy!!!!



Waffle Ingredients:
1 cup spelt flour
1 cup oat flour
1/4 cup flaxseed meal
1 tablespoon baking powder
2 tablespoons apple sauce (optional)
1 teaspoon vanilla extract
1 cup soy milk (any plant-based milk)
Mango Cream Ingredients
1 cup cashews (Soaked)
2 cups pieces of dried mango
1 teaspoon vanilla extract
3 tablespoons maple syrup (adjust to your sweetness)

You can pick fruits of your choice. We used

For toppings and decoration
crushed nuts of your Choice (optional)
