Description

An iconic Newfoundland recipe, Snowballs are soft, fudgy, and chewy chocolate balls with goodness of oatmeal and coconut.

These are tricky to make although they look simple.

Method:

  1. Bring milk, date paste, apple sauce, and chocolate chips to a boil. Reduce heat then add 1 tsp of vanilla.
  2. Remove from heat add 2 cups rolled oats and 2 cups unsweetened shredded coconut.
  3. Let the mixture cool in the freezer for 30 minutes.
  4. Once cool, roll into balls and roll in more coconut.

Ingredients

1/2 cup original soy milk (any plant based milk)
1/2 cup date paste
1/2 cup non-dairy chocolate chips
1/2 cup apple sauce
1 tsp vanilla
2 cups rolled oats
2 cups unsweetened shredded coconut (plus more to roll in)
