Rice Pudding (Payasam)

Description

No festival or auspicious occasion is complete without rice pudding. This is an all-time favourite for kids and adults alike.

Method:

  1. In a pot boil soy or non-dairy milk for 5 minutes.
  2. Add cooked brown basmati rice gradually, while stirring and cook for an additional 15 minutes.
  3. Add raisins and stir well. Add brown sugar and mix well. Let it cook for another 5-7 minutes.
  4. Add rose water, elaichi powder and saffron. Stir well.
  5. Let it cook for a minute and transfer to a serving bowl.
  6. Sprinkle dry roasted cashews/almonds and enjoy!

Ingredients

2 cups of cooked brown basmati rice
4 cups of soy milk (or almond milk)
1/2 cup to 1 cup of brown sugar (jaggery)
2 teaspoons of rose water (optional)
1/2 teaspoon Elaichi powder
A pinch of saffron (optional)
20 cashews or almonds
20 raisins or kismis
