We love these banana pancakes. These are quick and easy to make.
In a bowl take one cup of the pancake mix (click here for recipe of pancake mix) and form a well in the center. Mix the rest of the ingredients except the bananas and add them to the pancake mix (#2-4). Stir the batter until the pancake mix is thoroughly moistened. It will seem thin at first but will thicken after some time. Let the batter sit for at least 10 minutes or longer to allow it to thicken. If you do not let it sit, your pancakes won’t be as crisp. Then add 1/2 cup of diced bananas or a half-ripe banana (mashed). Mix them well.
Use a non-stick skillet on medium heat. We do not use any oil. Ladle a scoop of batter into the pan. Cook until the batter begins to bubble and the bottom is golden brown. Flip and cook on the other side until both sides are golden brown. Several pancakes can be cooked at once if you are using a large pan.
You can make 3 medium-sized pancakes with the above ingredients.
