Hearty Vegetable Stew

This thick and filling stew is so delicious. It is our favorite stew. The recipe is by our good friend Jeff Moulton.


  1. In a large sauce pan sauté onions, mushrooms, garlic on medium heat. Add 3-4 tablespoons of vegetable broth. Sauté till the onions caramelize.
  2. Add remainder of veggie broth and other ingredients, except flour and water, and simmer until vegetables are soft (25-30 mins)
  3. Now combine water and flour and whisk. Stir them into stew to thicken.

Servings: 5-6

1 cup peas
1 medium turnip (cut into ½ inch cubes)
3-4 medium potatoes
1 large onion, chopped
4 large carrots, sliced
1 and 1/2 cups fresh sliced mushrooms
4 cups vegetable broth (one liter)
2 tablespoons dried chives
1 tablespoon minced garlic
1 teaspoon Montreal steak spice
1/2 teaspoon celery salt
1/2 teaspoon salt
1/3 cup whole wheat flour
1/2 cup water
