Hearty Vegetable Stew

This thick and filling stew is so delicious. It is our favourite stew. The recipe is from our good friend Jeff Moulton.


  1. In a large saucepan sauté onions, mushrooms, and garlic on medium heat. Add 3-4 tablespoons of vegetable broth. Sauté till the onions caramelize.
  2. Add the remainder of veggie broth and other ingredients, except flour and water, and simmer until vegetables are soft (25-30 mins)
  3. Now combine water and flour and whisk. Stir them into stew to thicken.

Servings: 5-6

1 cup of peas
1 medium turnip, cut into ½ inch cubes
3-4 medium potatoes
1 large onion, chopped
4 large carrots, sliced
1 1/2 cups mushrooms, sliced
4 cups of vegetable broth (one litre)
2 tablespoons of dried chives
1 tablespoon of minced garlic
1 teaspoon of Montreal steak spice
1/2 teaspoon of celery salt
1/2 teaspoon of salt
1/3 cup of whole wheat flour
1/2 cup of water
