Cabbage Rolls

Can a newfoundland dinner be complete without Cabbage Rolls!


  1. Heat a saucepan to medium heat. Saute the peppers and mushrooms with vegetable broth. Add beans
  2. Add thyme, basil, pepper and let it simmer for 5 min. Turn off the stove and let it stand for 5 min
  3. Cook cabbage leaves in boiling water until they are slightly tender.
  4. Preheat oven to 350 degrees
  5. Place a heaping spoon of filling onto the cabbage leave and roll to completely enclose the filling.
  6. In a baking dish pour 1/3rd cup of tomato sauce. Place cabbage rolls and then spoon remaining sauce over the top
  7. Bake for 1 hr or until heated through

10 cabbage leaves from large head cabbage
1/2 cup chopped red pepper
1/2 cup chopped green pepper
1/2 cup chopped orange pepper
1.5 cup chopped mushrooms
3/4 cup cooked black beans
3/4 cup vegetable broth
1 tsp dried basil
1 tsp dried thyme
1/4 tsp pepper
8 ounces pasta sauce (Healthy Choice Italian style vegetables sauce)
