Description

These are the best baked we ever had. The recipe is by my friend’s mom, Ella Hollett.
Servings: 8-10 Preparation time: 30 minutes Cooking time: 3 hours
METHOD: Cover beans with water and soak overnight. Rinse them and drain the water.
Cover the beans with water again and boil them until soft (1 hour) . Do not drain. Place the beans in the preheated roaster/oven. Add remaining ingredients and cover the dish with a lid or aluminum foil. Bake at 350°F until beans are tender and brown, approximately for 2 hours. Remove the lid halfway through cooking, and add more liquid if necessary to avoid beans from getting too dry.

Ingredients

3 cups of white beans (dry)
1 1/2 cups of pineapple (fresh or canned)
1 cup of diced tomatoes (fresh or canned)
1 red pepper, cut into 1/2" pieces
1 green pepper, cut into 1/2" pieces
1 large onion, cut peppers into 1/2" pieces
1/2 cup of molasses
1 tablespoon of brown sugar
Add a pinch of salt to taste, if desired
