Baked Beans

These are the best baked we ever had. The recipe is by friend’s Mom, Ella Hollett.
Servings: 8-10 Preparation time: 30 minutes Cooking time: 3 hours
METHOD: Cover beans with water and soak overnight. Rinse them and drain the water.
Cover the beans with water again and boil them until soft (1 hour) . Do not drain. Place the beans in the preheated roaster/oven. Add remaining ingredients and cover the dish with a lid or aluminum foil. Bake at 350 degrees until beans are tender and brown, approximately for 2 hours. Remove the lid, halfway through cooking, and add more liquid if necessary to avoid beans from getting too dry.


3 cups white beans (dry)
1 and half cups pineapple (fresh or canned)
1 cup diced tomatoes (fresh or canned)
1 red pepper
1 green pepper
1 large onion (cut peppers and onion into 1/2 inch pieces)
1/2 cup molasses
1 tablespoon of brown sugar
pinch of salt to taste, if desired
