Upma is one of the traditional South Indian breakfasts. Upma can be made in several different ways. Here is recipes for upma made with whole grain brown rice.

Method:
Soak brown rice for half hour. Bake it at 375 degree Fahrenheit or 180 Centigrade for 15 min. Blend it in a blender into coarse granules. Keep this a side.
In a saucepan dry roast mustard seed, urad dal and cumin seeds for one minute. Add chilies, ginger, onion and curry leaves and sauté them for a minute. Add tomatoes followed by 6 cups of water. Cover with a lid. Let the water boil. Add salt and stir. Add cracked rice and cover with a lid. Cook until the rice is soft (for 5 minutes).
Squeeze juice of a 1/2 lemon. Add 2 tablespoons of cilantro for garnishing.
Transfer to the serving dish.
Hint: Cracked brown rice can be prepared ahead and stored in a container in a dry place for several weeks.

3 chilies, finely chopped |
1-inch of ginger, finely chopped |
1 medium onion, cut into thin long pieces |
10-15 curry leaves |
1/4 teaspoon of mustard seeds |
1/4 teaspoon of urad dal (white lentils) |
1/2 teaspoon of cumin seeds (Jeera) |
2 Tomatoes, cut into 1cm pieces |
Salt for taste (1/2 teaspoon) |
