To all the steak lovers: Who doesn’t like to have pork chops or ribs and if possible every week? You do not have to give your love away just because you are on a plant-based diet. Joan Green enticed everybody with this ribs recipe at one of the GOH potlucks.
Method:
| To make the dough: |
| 2 cups of vital wheat gluten (Bob's Red Mill or other brands) |
| 3/4 cup of mashed chickpeas or chickpea flour |
| 1/4 cup of nutritional yeast |
| 1 teaspoon of smoked paprika |
| 1 teaspoon of garlic powder |
| 1 tablespoon of soy sauce |
| 4 tablespoons of tomato purée |
| A pinch of salt |
| 1 1/2 cups of vegetable stock (Epicure) |
| For Braising Stock: |
| 1/2 cup of vegetable stock (Epicure) |
| 1 onion, diced |
| 4 garlic cloves |
| 2 bay leaves |
| 1/4 cup of brown sugar |
| 1/4 cup of barbecue sauce |
| 1 tablespoon parsley |
| 1 tablespoon soy sauce |
| 1 tablespoon molasses |
| 1/2 teaspoon thyme |
| 1/2 teaspoon chili powder |
| 3 tablespoons Dijon mustard |
| A dash of liquid smoke |
| 2 cups of water |
