Ribs (fibs)

To all the steak lovers –  who doesn’t like to have pork chops or ribs and if possible every week? You do not have to give your love away just because you are on a plant-based diet. Joane Green enticed everybody with this ribs recipe in one of the GOH potlucks.


  1. Prepare the dough by kneading all the ingredients listed under dough. Make sure that it is not too sticky. You can add more wheat gluten if required to make to make it less sticky and soft.
  2.  Shape them into steak.
  3. Preheat oven to 350°
  4.  Mix the ingredients for braising stock together in a large baking dish.  Place steaks in the liquid. Make sure to leave room for expansion.
  5. Cover and bake for one hour.
  6. Uncover flip and bake for an additional 45 minutes.
  7. Remove from liquid and cooling.
  8. Pan fry or grill with your favourite spices or barbecue sauce.
  9. You can cut them into smaller pieces or freeze them for later use. Enjoy!!!


To make the dough:
2 cups vital wheat gluten (Bob's red mill or other brands)
3/4 cup mashed chickpeas or chickpea flour
1/4 cup nutritional yeast
1 tsp smoked paprika
1 tsp garlic powder
1 Tbsp Soy sauce
4 Tbsp tomato puree
pinch of salt
1.5 cups vegetable stock (epicure)
For Braising stock:
1/2 cup vegetable stock (epicure)
1 onion diced
4 garlic cloves
2 Bay leaves
1/4 cup brown sugar
1/4 cup barbecue sauce
1 Tablespoon parsley
1 Tablespoon soy sauce
1 Tablespoon molasses
1/2 teaspoon thyme
1/2 teaspoon chilli powder
3 tablespoons Dijon mustard
dash of liquid smoke
2 cups water
