If using dry dates, soak them for few minutes in water. Drain the water. Pulse the almonds in a food processor until they are broken but still in crunchy chunks. Add rest of the ingredients (except coconut) and blend till all the ingredients mix well.
Take a square baking pan. Sprinkle shredded coconut at the bottom of the pan. Spread the mixture on the pan evenly with hands and sprinkle coconut on top.
Refrigerate for one hour prior to cutting into bars.

1/2 cup of cacao nibs (or 1/4 cup of small semi-sweetened chocolate chips) |
