This is a quick and easy stew ready in minutes.
| 1 medium sweet onion |
| 3 garlic cloves, minced |
| 1 red bell pepper, diced |
| 1 medium sweet potato, peeled & chopped into 1/2-inch pieces |
| 2 medium carrots diced |
| 2 large tomatoes diced around 2 cups |
| 1/3 cup natural peanut butter |
| 4 cups no sodium vegetable broth |
| 1 tsp chili powder or cayenne pepper |
| 1.5 cup cooked chickpeas,or one (15oz) can chickpeas drained & rinsed |
| 1/2 tsp Salt |
| 1/4 tsp turmeric |
| 1/2 tsp pepper |
| 6 cups baby spinach or torn kale leaves |

| Fresh cilantro or parsley leaves |
