1 medium sweet onion |
3 garlic cloves, minced |
1 red bell pepper, diced |
1 medium sweet potato, peeled & chopped into 1/2-inch pieces |
2 medium carrots diced |
2 large tomatoes diced around 2 cups |
1/3 cup natural peanut butter |
4 cups no sodium vegetable broth |
1 tsp chili powder or cayenne pepper |
1.5 cup cooked chickpeas,or one (15oz) can chickpeas drained & rinsed |
1/2 tsp Salt |
1/4 tsp turmeric |
1/2 tsp pepper |
6 cups baby spinach or torn kale leaves |
