Rosa Moulton introduced us to this simple yet delicious salad. It goes well with any side dish. You can adjust the quantity of vinegar and sweetener to your liking.
Method:
Combine all the ingredients and you have a wonderful salad in a jiffy, plus an instant crowd pleaser!
| 2 English cucumbers, sliced |
| 1 pack of cherry tomatoes, sliced (around 20) |
| 2 cups of cooked chickpeas (or canned) |
| 1 avocado, chopped |
| Fresh chopped dill, to taste |
| 1/4 cup of apple cider vinegar |
| 2 tablespoons of agave/maple syrup |
| Salt and pepper to taste |
