Description

Another wonderful recipe by Sylvia Smith – Tofu Egg Salad

Method:

  1. Place tofu in a large bowl and press with a fork to break it up into small pieces.
  2.  Add the mayo, mustard, pickles, onion, turmeric, salt and pepper and stir to combine.
  3.  Often this salad tastes better the next day.
  4.  Fill your bread with condiments, tomato, and lettuce and top with Tofu Egg Salad.

Ingredients

1 block of extra firm tofu (drained)
1 tablespoon of GOH Mayo
1 tablespoon of regular or Dijon mustard
2 sweet pickles, chopped
1/4 cup of red onions finely diced
1/2 teaspoon of turmeric
Salt and pepper to taste
