    Taco cups

    Sylvia Smith blew everyone’s tastebuds away when she made these Taco cups in GOH support group meeting.


    1. Bring the pan to a medium heat. Saute the onions for 3-4 mins
    2. Add garlic and saute it for another min. Add corn, beans, tomatoes and mix them well.
    3. Add the Tex-Mex spice or make the taco seasoning using the ingredients listed. After adding the spice let it simmer for 5 to 10 mins. Stir in between.
    4. Meanwhile, preheat the oven to 350F and prepare the taco cups.
    5. To make the taco cups, cut the edges of tortillas to form a square. Now slice the large square into 4 small squares by slicing down the middle vertically and horizontally
    6. Take a muffin pan. Place one square in the muffin mold and layer another square on top of it to form a star shape. Repeat until you fill all the muffin molds.
    7. Remove taco mix from heat. Spoon 1-2 Tbs of taco mix into each taco star cups.
    8. Bake it for 10 min.
    9. Meanwhile prepare GOH sour cream
    10. Remove the baked muffin pan from oven. Garnish the taco cups with sour cream, cilantro, green onions and tomatoes.

    6 whole wheat tortillas
    1 medium onion diced
    1 cup frozen corn thawed
    2 cups cooked black beans/kidney beans
    20 cherry tomatoes quartered
    2 garlic cloves finely diced
    1 Tbs lime juice
    1 Tbs Tex-Mex spice or Taco seasoning
    To make Taco seasoning:
    1 tsp cumin
    1/2 tsp paprika
    1/2 tsp chili powder
    1/2 tsp dried oregano
    1/4 tsp salt
    For garnishing:
    5 cherry tomatoes finely diced
    3 Tbs finely diced coriander
    3 Tbs finely diced green onions
    GOH Sour cream
