Description

These Southwestern Bowls are easy to make, insanely delicious and packed with nutrients.

Step 1: Evenly place the cooked quinoa (or grain of your choice), black beans, kale and corn into bowl or plate.

Step 2: To finish the bowl, top with salsa, cilantro, avocado, jalapeno and cashew sour cream.

Tip – We sautéed quinoa on dry medium heat and cooked it in an Instant Pot. Black beans were cooked in an Instant Pot as well with a small amount of salt. You could also use canned beans of your choice. Choose the ones with low sodium or no salt added.

The recipes serves 3-4 people.

 

Ingredients

2 cups of cooked quinoa or cooked whole grain of your choice
2 cups of black beans or beans of your choice, cooked and strained
1/2 bunch of kale or greens of your choice
2 cups of corn or 2 ears of corn
1/2 of an avocado
1/3 or 1/2 cup of salsa
1/4 cup of chopped cilantro (optional)
1 jalapeno, thinly sliced (optional)
1/4 cup of cashew sour cream (optional)
