These Southwestern bowls are easy to make, insanely delicious and packed with nutrients.
Step 1 : Evenly place the cooked quinoa (or grain of your choice), black beans, kale and corn into bowl or plate.
Step 2: To finish the bowl, top with salsa, cilantro, avocado, jalapeno and cashew sour cream.
Tip – we sauteed quinoa on dry medium heat and cooked it in instant pot. Black beans were cooked in instant pot as well with small amount of salt. You could also used canned beans of your choice. Choose the one with low sodium or no salt added.

|2 cups cooked quinoa or whole grain of your choice (cooked)|

|1/2 bunch of kale or greens of your choice|
|2 cups of corn or 2 ears of corn|
|1/2 of avocado|
|1/3 rd or 1/2 cups salsa|
|1/4 cup of chopped cilantro (optional)|
|1 jalapeno, thinly sliced (optional)|
|1/4 cup cashew sour cream (optional)|
