Description

Florence from our GOH group always comes up with new ideas for dishes.

This is another example where you can make a delicious meal with a serving of grain, bean, greens and veggies or any left overs in your fridge.

You can be creative and substitute the below ingredients with your choice of grain, bean, and veggies

Method:

  1. Combine all the ingredients for salad.
  2. Pour the curry dresing over and mix well

Ingredients

Salad:
1 cup brown rice
1/2 cup cooked chickpeas (or canned, no salt added)
1 pepper (red,green,orange or yellow) diced
1/2 cup red onion finely diced
1 cup greens (cilantro or parsely or spinach)
Dressing:
1 serving GOH Curry dressing
Toppings:
2 Tbs raisins
