Description

Florence from our GOH group always comes up with new ideas for dishes.

This is another example where you can make a delicious meal with a serving of grain, bean, greens and veggies or any left-overs in your fridge.

You can be creative and substitute the below ingredients with your choice of grain, bean, and veggies

Method:

  1. Combine all the ingredients for the salad.
  2. Pour the curry dressing over it and mix well

Ingredients

Salad:
1 cup of brown rice
1/2 cup of cooked chickpeas (or canned, no salt added)
1 pepper (red, green, orange or yellow), diced
1/2 cup of red onion, finely diced
1 cup of greens (cilantro or parsley or spinach)
Dressing:
1 serving GOH Curry dressing
Toppings:
2 Tbs raisins
