Cuban Black Bean Soup

Description

This is a flavourful Cuban delicacy which is a must-try!

Method:

In Instant Pot:

  1. Soak the black beans overnight and rinse and drain them. OR if you do not have time, you can also use rinsed dried black beans.
  2.  Select “Sauté”  on the Instant Pot. Add onion,  bay leaf,  garlic, and sauté for a few minutes. Add pepper and the remaining spices. Sauté for another 2 minutes.
  3.  Add black beans, vinegar, water and stir.  Close the lid and press the bean button. Set the timer for 20 minutes.
  4. Once done, release the pressure. Open the lid and use an immersion blender to partially blend the beans.
  5. Pour into a serving bowl and garnish with 1 tablespoon of sour cream, avocado, tomato, and cilantro.  Enjoy!

On Stovetop:

  1. Heat a pot over medium heat. Add onion,  bay leaf,  garlic, and sauté for a few minutes. Add pepper and the remaining spices. Sauté for another 4 minutes.
  2.  Add black beans, vinegar, water and stir.  Close the lid and boil for 40 minutes. Let simmer until the beans are cooked.
  3. Once cooked, use an immersion blender to partially blend the beans.
  4. Pour into a serving bowl and garnish with 1 tablespoon of sour cream, avocado, tomato, and cilantro.  Enjoy!

Ingredients

1 pound of dried black beans
1 large red onion, chopped
1 bell pepper, chopped
6 garlic cloves, minced
2 teaspoons of dried oregano
2 teaspoons of smoked paprika
1 teaspoon of Tex-Mex spice
1 teaspoon of ground cumin
1 teaspoon of salt
1 teaspoon of black pepper
1 bay leaf
4 tablespoons of red wine vinegar
4 cups of water
For Garnishing one serving bowl:
1 tablespoon of cashew sour cream
1 tablespoon of chopped avocado
2 tablespoons of chopped tomato
1 tablespoon of minced scallion
2 tablespoons of chopped cilantro
