Cuban Black Bean Soup

Description

This is a flavorful Cuban delicacy which is a must try!

Method:

In Instant Pot:

  1. Soak the black beans overnight and rinse and drain them. OR if you do not have time, you can also use rinsed dried black beans.
  2.  Select “Saute”  on instant pot. Add onion,  bay leaf,  garlic, and sauté for a few minutes. Add pepper and the remaining spices. sauté it for another 2 minutes.
  3.  Add black beans, vinegar, water and stir it.  Close the lid and press the bean button. Set the timer for 20 min
  4. Once done, release the pressure. Open the lid and use an immersion blender to partially blend the beans.
  5. Pour into a serving bowl and garnish with 1 tablespoon of sour cream, avocado, tomato, and cilantro.  Enjoy!

On Stovetop:

  1. Heat a pot over medium heat. Add onion,  bay leaf,  garlic, and sauté for a few minutes. Add pepper and the remaining spices. sauté it for another 4 minutes.
  2.  Add black beans, vinegar, water and stir it.  Close the lid and boil it for 40 min. Let it simmer until the beans are cooked.
  3. Once cooked, use an immersion blender to partially blend the beans.
  4. Pour into a serving bowl and garnish with 1 tablespoon of sour cream, avocado, tomato, and cilantro.  Enjoy!

Ingredients

1 pound dried black beans
1 large red onion chopped
1 bell pepper chopped
6 garlic cloves minced
2 teaspoons dried oregano
2 teaspoons smoked paprika
1 teaspoon Tex-Mex spice
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon black pepper
1 bay leaf
4 tablespoons red wine vinegar
4 cups water
For Garnishing one serving bowl:
1 Tbs cashew sour cream
1 Tbs chopped avocado
2 Tbs chopped tomato
1 Tbs minced scallion
2 Tbs chopped cilantro
