Sylvia Smith not only has a way of making delicious recipes but also has a special eye for presenting them. She presented this dish for one of our GOH potlucks. This chickpea walnut mix goes well on Burger buns, wraps, tortillas (whole wheat or corn), bread or pitas. You can use sliced zucchini or cucumber to wrap on top of the sandwich to give that extra zing
Method:
1 1/2 cups of cooked chickpeas (or canned) |
1/3 cup of chopped walnuts |
3 tablespoon of GOH Mayo |
2 tablespoon of sliced green onions |
1 tablespoon of maple syrup/honey |
1/2 teaspoon of spicy mustard/dijon mustard |
Salt and pepper to taste |
Toppings: |
Lettuce |
Tomato |
Onion |
Cucumber |
Zucchini |
Sprouts |
