Chickpea Walnut Sandwich

Description

Sylvia Smith not only has a way of making delicious recipes but also has a special eye for presenting them. She presented this dish for one of our GOH potlucks. This chickpea walnut mix goes well on Burger buns, wraps, tortillas (whole wheat or corn), bread or pitas. You can use sliced zucchini or cucumber to wrap on top of the sandwich to give that extra zing

Method:

  1. Prepare GOH Mayo.
  2. In a bowl, add chickpeas and slightly mash with a fork. Add remaining ingredients – walnuts, mayo, green onion, maple syrup, mustard and mix them together.
  3. Season with salt and pepper. Sometimes I prepare the mix ahead of time. It tastes better the next day.
  4. Thinly slice zucchini or cucumber using a mandoline or by hand.
  5. To make a sandwich, scoop the desired amount of chickpea mixture onto the bread and add your desired toppings. Top with the other slice of bread.

Ingredients

1 1/2 cups of cooked chickpeas (or canned)
1/3 cup of chopped walnuts
3 tablespoon of GOH Mayo
2 tablespoon of sliced green onions
1 tablespoon of maple syrup/honey
1/2 teaspoon of spicy mustard/dijon mustard
Salt and pepper to taste
Toppings:
Lettuce
Tomato
Onion
Cucumber
Zucchini
Sprouts
