Cuban Black Bean Soup
Description
This is a flavourful Cuban delicacy which is a must-try!
Method:
In Instant Pot:
- Soak the black beans overnight and rinse and drain them. OR if you do not have time, you can also use rinsed dried black beans.
- Select “Sauté” on the Instant Pot. Add onion, bay leaf, garlic, and sauté for a few minutes. Add pepper and the remaining spices. Sauté for another 2 minutes.
- Add black beans, vinegar, water and stir. Close the lid and press the bean button. Set the timer for 20 minutes.
- Once done, release the pressure. Open the lid and use an immersion blender to partially blend the beans.
- Pour into a serving bowl and garnish with 1 tablespoon of sour cream, avocado, tomato, and cilantro. Enjoy!
On Stovetop:
- Heat a pot over medium heat. Add onion, bay leaf, garlic, and sauté for a few minutes. Add pepper and the remaining spices. Sauté for another 4 minutes.
- Add black beans, vinegar, water and stir. Close the lid and boil for 40 minutes. Let simmer until the beans are cooked.
- Once cooked, use an immersion blender to partially blend the beans.
- Pour into a serving bowl and garnish with 1 tablespoon of sour cream, avocado, tomato, and cilantro. Enjoy!
Ingredients
1 pound of dried black beans
1 large red onion, chopped
1 bell pepper, chopped
6 garlic cloves, minced
2 teaspoons of dried oregano
2 teaspoons of smoked paprika
1 teaspoon of Tex-Mex spice
1 teaspoon of ground cumin
1 teaspoon of salt
1 teaspoon of black pepper
1 bay leaf
4 tablespoons of red wine vinegar
4 cups of water
For Garnishing one serving bowl:
1 tablespoon of cashew sour cream
1 tablespoon of chopped avocado
2 tablespoons of chopped tomato
1 tablespoon of minced scallion
2 tablespoons of chopped cilantro
