White Bean Stew

Description

Preparation time: 20 mins
Cooking time: 3 hours
Servings: 6-8
METHOD: Boil beans in 8 cups of water with onion, garlic, salt and pepper. Reduce heat and simmer for 2 ½ hours. Add carrot, turnip and celery, and return to a boil. Reduce heat and simmer for another ½ hour. Then add the potatoes and cook until potatoes and the other vegetables are soft.

1 pound of dry white pea beans (454 g)
8 cups water
1 clove garlic
1 medium onion, diced
1 tsp salt
½ teaspoon black pepper
2 cups carrot, diced
2 cups turnip, diced
4 medium potatoes, diced
