Veggie Wrap

Yvonne Crew made this simple yet freakingly delicious wraps for the GOH potluck. It takes only 5 mins of your prep time if you have all the ingredients. Kids and adults alike will love them!


  1. Warm each tortilla in microwave for about 30 seconds or heat on the pan until warm.
  2. Pour 1/3 cup salsa in a strip on the half of the tortilla that is closest to you.
  3.  spread 1/3 cup of black beans, 1/3 cup of corn and few diced avocado over salsa.
  4. Sprinkle 1 tablespoon of cilantro over filling mixture.  Top with 1 cup baby greens.
  5.  Fold side edges of wrap over the ingredients and then roll from the front edge closest to you.
  6.  Slice the wrap in half.
  7.  Repeat the process for the other tortillas and Enjoy!!!

Gives you 6 servings


3 large whole grain tortillas
1 cup salsa (mild, thick and chunky)
1 cup black beans
3/4 cup corn (thawed or fresh)
1/2 chopped avocado
3 cups baby greens
3 tablespoon chopped cilantro
