Veggie Wrap

Yvonne Crew made these simple yet freakingly delicious wraps for the GOH potluck. It takes only 5 minutes of prep time if you have all the ingredients. Kids and adults alike will love them!


  1. Warm each tortilla in the microwave for about 30 seconds or heat on the pan until warm.
  2. Pour 1/3 cup of salsa in a strip on the half of the tortilla that is closest to you.
  3.  Spread 1/3 cup of black beans, 1/3 cup of corn and a few diced pieces of avocado over the salsa.
  4. Sprinkle 1 tablespoon of cilantro over the filling mixture.  Top with 1 cup of baby greens.
  5.  Fold side edges of the wrap over the ingredients and then roll from the front edge closest to you.
  6.  Slice the wrap in half.
  7.  Repeat the process for the other tortillas and Enjoy!!!

3 large whole grain tortillas
1 cup salsa (mild, thick and chunky)
1 cup black beans
3/4 cup corn (thawed or fresh)
1/2 chopped avocado
3 cups baby greens
3 tablespoon chopped cilantro
