Subz Jalfrezi or Vegetable Jalfrezi is a spicy and tasty Indian style stir-fry. It is best served with rice or roti.
Servings: 4-6, Cooking time including preparation: 25 mins.
Method:
In vessel, boil/steam carrot and beans for 10 mins.
Simultaneously, in a medium sized sauce pan, dry roast fennel seeds, red chillies for minute, add capsicum, onion. After 2 minutes add garlic, tomato puree, salt, deggi mirch powder( or paprika). Cook for 2 minutes. Add 1 cup of water, cover with lid and cook for 3 mins.
Add boiled carrots and beans. Add kasoori methi and cook for 2 mins. Add chopped coriander and tomato – cook for 1 min. Mix well and transfer the contents into a serving bowl.
One Green Bell Pepper (capsicum) – long sliced |

One tomato – cored (remove seeds), sliced long ways |
Saunf (fennel seeds) – 1/2 teaspoon |
Dry red chillies – 3 |
1/2 cup green beans – 2 inch long pieces |
Garlic cloves – 3 finely sliced |
Tomato puree – 100 gms (1/2 cup) |
1/2 teaspoon salt |
1/2 teaspoon jeera (cumin) powder |
1/2 teaspoon deggi mirch powder (or paprika) |
1/2 teaspoon kasoori methi (crushed) |
2 teaspoon coriander leaves – chopped (cilantro) |
