Description

Sometimes life doesn’t have to be so complicated. Things can be made with just 2 ingredients on hand. We always advise our GOH participants to have cooked grain, cooked bean/lentils, baked potato or sweet potato in the fridge. There are endless possibilities that you can make with just these simple ingredients.

When it comes to breakfast we think in terms of cereal, fruit, muffins, or idli, dosa (for an Indian breakfast) but it doesn’t have to be that way. How about just sweet potato and sprouts?.

You heard that right. Just cube a baked sweet potato into bite-size pieces and add 1/4 cup of mung bean sprouts to have a delicious, nutritious wholesome breakfast. Enjoy!

To bake a sweet potato:

  1. Preheat oven to 400 degrees.
  2. Scrub sweet potatoes. Place on a baking or silicone dish. Cover with aluminum foil.
  3. Bake for about 45 minutes, or until potatoes are tender. Remove from oven and allow to cool slightly.

Ingredients

1 baked sweet potato, cubed
1/4 cup of mung bean sprouts
