Pumpkin Pie Spice Oatmeal

Description

This oatmeal can warm your heart any time of the year. The warm pumpkin spice can bring back the fall and christmas memories. It is a quick breakfast to serve if you have guests over and a crowd pleaser for sure!

Method:

  1. In instant pot or pressure cooker, add 5 cups of water and milk. Add the spices, salt and raisins and stir it.
  2. Add the oats, sweet potato, and do not stir. Lock the lid and let it cook in high pressure for 6 minutes in instant pot or pressure cooker. Let the pressure come down naturally.
  3. Carefully open the lid and stir in the mixture. If it is watery, you can let it sit for 5 min. Remove the cinnamon sticks.
  4. Scoop out in a bowl and add maple syrup to taste (optional – If you prefer dates instead of maple syrup you can add them along with oats before cooking).
  5. Top each bowl with toasted walnuts. Enjoy!!!

Variation: You can use any type of squash or pumpkin instead of sweet potato. You can also try this with buckwheat groats instead of oats. This gives about 10 servings and I usually store some in the fridge for next day. It’s gone before I know.

2 cups Steel cut oats
2 cups Soy/plant-based milk
1 cup diced sweet potato or puree
5 cups of water
2-3 cinnamon sticks
1/4 to 1/2 cup raisins
1 tsp grated nutmeg
1/2 tsp ground cardomom
1/4 tsp salt
2 tsp pumpkin pie spice
2 tsp vanilla extract
1/4 cup chopped walnuts toasted
Maple syrup (optional)
