Navratan Korma is a rich, creamy and flavorful dish loaded with vegetables, fruits and nuts. It is an all time favorite in our house.

Method:
Boil cashews for 7 mins. Wash them with cold water and grind to paste with 1/3 rd cup of water. Keep it a side.
In a pan, dry roast cardamom (crush it first), bay leaf, one green chili, onion and raisins for two minutes, then add cashew paste and two cups of water. Let it cook for 3 mins, stir it well for couple of times as it cooks. Cover it with lid. Add elaichi powder and vegetables, mint and cilantro. Stir well. Add fruits, methi, salt and sugar – stir them well. Soak saffron in 1 tablespoon of hot water for 2 mins. Add the saffron water and soaked saffron to the dish. Transfer to serving dish. Serve it with Roti or Rice.
