Ethiopian Spice Blend (Berbere)

Description

I use this blend in most of my lentil and bean dishes. This is a traditional spice mix used in Ethiopia. If you want to make the mixture less spicy or hot you can replace the cayenne pepper with milder chili powder.

Method:

  1. Heat the pan on medium heat and toast all the ingredients until you get a nice toasted aroma.
  2. Cool the mixture and put it in a jar.

Ingredients

1/2 cup of cayenne powder
1/3 cup of paprika
1 1/2 teaspoons of ground ginger
1 1/2 teaspoons of ground cinnamon
1 teaspoon of ground coriander
1 teaspoon of ground fenugreek
1 teaspoon of ground cardamom
1 teaspoon of garlic powder
1 teaspoon of turmeric
1/4 teaspoon of ground cloves
1/4 teaspoon of ground nutmeg
