I use this blend in most of my lentil and bean dishes. This is a traditional spice mix used in Ethiopia. If you want to make the mixture less spicy or hot you can replace the cayenne pepper with milder chili powder.
Method:
1/2 cup of cayenne powder |
1/3 cup of paprika |
1 1/2 teaspoons of ground ginger |
1 1/2 teaspoons of ground cinnamon |
1 teaspoon of ground coriander |
1 teaspoon of ground fenugreek |
1 teaspoon of ground cardamom |
1 teaspoon of garlic powder |
1 teaspoon of turmeric |
1/4 teaspoon of ground cloves |
1/4 teaspoon of ground nutmeg |
