Preparation Time: 15 minutes
Method: Trim the spinach stems and tear into bite-sized pieces. Add the onion and mushrooms and toss to mix. Pour the dressing over and toss again. Serve at once.
1⁄4 cup soy sauce
1⁄4 cup rice vinegar
1⁄4 cup water
1 tablespoon Dijon mustard
1⁄4 teaspoon minced fresh garlic
1⁄4 teaspoon minced fresh ginger
Combine all ingredients in a blender jar and process until smooth.
