Kim was quite busy with lots of festivities/activities going on (her son’s wedding this week). Despite being so busy, she made it to the support group meeting last week and showed us how to make delicious chocolate date coconut rolls. They were absolutely delicious. They are quick and easy to make. The nice thing about this is that you can just make one or two in an instant to satisfy your sweet tooth.
1. Take a tablespoonful of non-dairy chocolate chips with two spoons of water and microwave them for 30 seconds (or until they melt).
2. Pit the Medjool date.
3. Stuff the date with your choice of nut – pecan/almond/hazelnut/cashew/pistachio/brazil nut
4. Roll the stuffed date in chocolate syrup. You can either leave as it is or roll the chocolate covered dateĀ in shredded coconut.

4-6 Medjool dates |
1 nut for each date (choice of nut-pecan/cashew/almond/hazelnut/brazil nut) |
2 tablespoons of unsweetened shredded coconut |
