Kadai Tofu (Spicy Tofu stir-fry)
Description
Kadai Tofu is a spicy vegetable stir-fry with tofu. It is similar to Kadai Paneer. Kadai Paneer is a popular, tasty and spicy North Indian dish. It is basically paneer (a type of soft cheese) cooked with vegetables and spices. Paneer is calorie dense and is loaded with fat especially saturated fat and cholesterol; both of them promote inflammation and heart disease. Tofu is made from soy beans. It is much healthier alternative to paneer.
Method
Cut peppers and onions into half inch pieces.
Dry roast fennel seeds, coriander seeds, Black pepper, Red chilli and Jeera (cumin) for 1 min. Grind these in a blender into coarse powder to make the kadai masala.
In a large sauce pan, dry roast ginger garlic paste for 15 seconds, add tomato puree and cashew paste (Grind one ounce of cashews with 2 tablespoons of water). Cook for 2 mins. Add coriander powder, Jeera Powder, deggi mirch powder, cut peppers and onions, salt, 1 cup water, tofu, methi powder, kadai masala powder, stir well and cook for 5-6 mins. Add coriander leaves to garnish.
It is best served with rice or roti.

1/4 teaspoon ground black pepper
8 whole dried red chilies
1/2 teaspoon jeera (cumin)
400 grams tofu, cut into 1 cm cubes
1/2 teaspoon ginger garlic paste
200 grams tomato purée
2 tablespoons cashew paste
1 teaspoon coriander powder
1 teaspoon jeera (cumin) powder
1 teaspoon deggi mirch powder or paprika
1 teaspoon salt
1/2 teaspoon kasoori methi powder (crushed)
2 teaspoons chopped cilantro (coriander leaves)
