Palak Mushroom (Spinach With Mushroom)
Description
Palak Mushroom is a thick and creamy spinach cooked with spices and mushrooms. It is one of our favourite curries. It can be served with rice or roti (Indian Bread)
Prep/cooking time: 30 minutes
Servings: 5-6
Method:
- Blanch spinach in boiling water for 7-8 minutes.
- Add 1/2 teaspoon of sugar to water to prevent discolouration (optional).
- Keep the water in which spinach is boiled aside.
- Make a purée of spinach along with cashews in a blender/mixer/grinder and keep it aside.
- Blanch mushrooms in hot water for 8-10 minutes.
- In a saucepan, dry roast cumin seeds and let them splutter.
- Add onions, salt, garlic, ginger and chilies. Let them cook for 3 minutes.
- Add the spinach purée. Mix in the coriander powder, cumin powder, kasuri methi and garam masala. Cook for 8-10 minutes.
- Add 160 ml (2/3 cup) of water (use water that was kept aside). Stir it intermittently.
- Add mushrooms and chopped coriander leaves. Stir them, cover with a lid and let it cook for 2 minutes.
- Add water (if necessary) to avoid sticking to pan. Cook for another 2-3 minutes.
- Transfer to a serving bowl and enjoy.

4 cups spinach (palak) – 6 ounces or 180 grams
7 ounces mushrooms – 7 ounces or 200 grams
3–4 green chilies, finely chopped
2 teaspoons ginger, chopped
4 garlic cloves, chopped
1/2 teaspoon cumin
1 tablespoon coriander leaves (cilantro), chopped
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon garam masala
1/2 teaspoon kasoori methi (dried fenugreek leaves) (optional)
10 cashews
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
