Fruit and Nut Cake
Description
Myrtle Kelly is a sweet lady – literally! She appeases us with her sweet treats at every support group meeting. Fruit and Nut cake was one of her trials which made us go nuts.
Method:
- Place a saucepan on medium heat. Add 2 cups of water, raisins, and apricots. Cook for 10 minutes with the lid covered.
- Preheat oven to 350°F.
- Line a 9×12 inch pan with parchment paper
- In a medium bowl combine all the dry ingredients – whole wheat flour, baking soda, sugar, salt, cinnamon and nutmeg powder.
- In a separate large mixing bowl, pour the saucepan fruit mixture and combine all the wet ingredients – applesauce and vanilla extract. Allow the mixture to cool.
- Slowly incorporate the dry ingredients and fold into the wet ingredients.
- Fold in nuts.
- Pour into pan and level. Bake 35-40 minutes or until a toothpick comes out clean.
- Cool the pan for about 30 minutes and then turn the cake out of the pan. Cool completely before slicing. Enjoy!

1/3 cup of dried apricots, chopped
1/3 cup of raisins
2 cups of water
1/2 cup of apple sauce (GOH)
1 teaspoon of vanilla extract
1 3/4 cups of sprouted whole wheat flour
1/4 cup of sugar
1 teaspoon of baking soda
1/2 teaspoon of cinnamon powder
1/2 teaspoon of nutmeg powder
1/2 teaspoon of salt
1/4 cup of walnuts, chopped
1/4 cup of almonds, chopped
1/4 cup of pecans, chopped
1/4 cup of cashews, chopped
