Description

Quinoa cooks faster than rice and can be turned into a quick meal to please the crowd. When making dishes with quinoa, it is better to finely dice the vegetables to blend well with the small grain.

Method:

  1. Put a pot on  medium heat and dry roast cloves, cardamon, and cinnamon stick. Add quinoa and toast it for few minutes. Add 8 cups of water and put the lid on for it to cook. You can add 1/2 teaspoon of salt (optional). Alternately, you can also cook quinoa in a rice cooker or Instant pot.
  2. You can either finely dice all the vegetables or use a food processor to finely chop them.
  3. In a separate pan, saute all the vegetables. Add salt, turmeric, paprika and keep stirring until water is absorbed from vegetables. Add raisins, chopped cilantro, basil,  thyme.
  4. Add cooked quinoa to the pan and stir it well. Turn of the stove and drizzle some sliced almonds or toasted nuts.

4 cups Quinoa
2 cloves
1 cardamon
1 cinnamon stick
All vegetables finely diced
1 orange pepper
1 yellow pepper
1 red pepper
1 green pepper
1 carrot
1 small beet
1 celery stick
1 cup grated cauliflower
1 cup corn
handful of raisins
1/2 cup basil leaves chopped
1/4 cup cilantro chopped
1 Tbsp fresh thyme
1 tsp salt
1/2 tsp paprika
1/8 tsp turmeric
sliced almonds for garnishing
