Description

Onion paratha is a traditional North Indian bread  stuffed with onion and spices. Usually it is made with oil or ghee/butter. Here is a recipe for tasty whole grain parathas that are oil free and dairy free.

Servings: 8-9 parathas

Method:

For stuffing: In a bowl combine chopped onions, green chili, salt, amchur (dry mango powder), red chili powder and lemon juice

For the dough:  Need 1/2  kg or 1 pound of whole wheat flour (3 and half cups), 1/2 teaspoon salt (optional), 2 cups water for dough. Mix them well, knead the dough and keep it aside.

Preparing the stuffed parathas:

Make medium sized balls with the dough, roll out a disc of about 3-4 inches. Add 1-2 tablespoons of the stuffing. Be careful not to overstuff or understuff the paratha. Bring the edges of dough to cover the stuffing in the center. Roll the stuffed balls into 6-8 inch diameter parathas on a flat, smooth surface. Used small amount of rice flour to prevent sticking of the dough to the roller and underlying surface. Roast the parathas on nonstick pan each side for 1 to one half minute or until golden brown. Moisten the parathas by touching them with moist cloth made into a small ball, while cooking on the pan.

Serve parathas with your favorite curry.

 

Ingredients

4 medium onions or 2 large onions, finely chopped
2 green chili very finely chopped
salt for taste (1/2 teaspoon)
1/2 teaspoon amchur(dry mango) powder
1/2 teaspoon red chili powder
juice from one lemon or (one half tablespoon)
