When you can think of meatloaf high in fiber and protein and low in fat (seriously!) here it is black bean meatloaf….
You can also be creative to include cooked lentils, chickpeas or any other type of beans. Our favorite is the black bean one!
Preheat oven to 350 degrees F
Blend all the ingredients except for the topping in a food processor. Transfer into a mixing bowl. Add the bread crumbs. Mix all together. Line the loaf pan (8 inches by 2 & 1/2 inches) with parchment paper. Spoon the mixture into the loaf pan. Smooth top with back of the spoon.
Mix the toppings in a separate bowl and pour over the loaf.
Depending on your oven bake at 350 degrees F for 45-60 min until the top of loaf is dry, firm and golden brown. Yields up to 8 slices.

|1 egg replacer (1 tsp flaxmeal and 2 tsp water)|
|1 onion finely diced|
|1 cup bread crumbs|
|salt to taste|
|pepper to taste|
|2 cloves garlic|
|2 Tbs brown sugar|
|2 Tbsp mustard|
