Description

Myrtle Kelly is a sweet lady – literally! She appeases us with her sweet treats at every support group meeting. Fruit and Nut cake was one of her trials which made us go nuts.

Method:

  1. Place a saucepan on medium heat. Add 2 cups of water, raisins, and apricots. Cook for 10 minutes with the lid covered.
  2. Preheat oven to 350°F.
  3. Line a 9×12 inch pan with parchment paper
  4. In a medium bowl combine all the dry ingredients – whole wheat flour, baking soda, sugar, salt, cinnamon and nutmeg powder.
  5. In a separate large mixing bowl, pour the saucepan fruit mixture and combine all the wet ingredients –  applesauce and vanilla extract. Allow the mixture to cool.
  6.  Slowly incorporate the dry ingredients and fold into the wet ingredients.
  7. Fold in nuts.
  8. Pour into pan and level. Bake 35-40 minutes or until a toothpick comes out clean.
  9. Cool the pan for about 30 minutes and then turn the cake out of the pan. Cool completely before slicing. Enjoy!

 

Ingredients

1/3 cup of dried apricots, chopped
1/3 cup of raisins
2 cups of water
1/2 cup of apple sauce (GOH)
1 teaspoon of vanilla extract
1 3/4 cups of sprouted whole wheat flour
1/4 cup of sugar
1 teaspoon of baking soda
1/2 teaspoon of cinnamon powder
1/2 teaspoon of nutmeg powder
1/2 teaspoon of salt
1/4 cup of walnuts, chopped
1/4 cup of almonds, chopped
1/4 cup of pecans, chopped
1/4 cup of cashews, chopped
