Description

Coconut milk is an excellent substitute for dairy milk in cooking various dishes. It is a common ingredient in many tropical cuisines. We love using it in making of pudding or kheer.

Method:

Remove coconut flesh (white part) from coconut. Cut it into 1 to 2 cm pieces. Blend them with 3 and half cups of water in high powered blender for 1 minute. Strain blended contents with a fine cloth (cheese cloth or nut milk bag) to yield around 3 cups of coconut milk. The milk will store in fridge for 3-4 days. Shake the milk prior to usage as the mixture will settle when sitting.

Hint: Instead of fresh coconut, one and half to two cups of frozen grated/shredded unsweetened coconut can be blended with 3 and half cups of water to yield 3 cups of coconut milk.

The leftover coconut pulp can be dried to make coconut flour that can be used in baking.
