Description

“I love Cheese” is what you would say when you try this dish. If you do not tell the kids what’s in it, they would say “Cheezzz” and devour it. If you tell them beforehand, they may say “Naaayy, gimme my cheese. So reveal it after they finish or it can be your little secret…..
This cheeze sauce made with vegetables always surprises my guests and my teenage son’s friends. You can use any blender to make this but I find the Vitamix gives that smooth, natural consistency of cheese sauce.
In our house, Cheeze Sauce is a staple that’s always in our fridge or freezer. There are lots of varieties of dishes that you can make with this dish such as mac & cheeze, nachos & cheeze, cheezy stuffed mushrooms, cheezy pasta, cheezy chickpeas, dip and so on.
Method:
1. Soak the cashews in 1 cup of water for at least an hour.
2. Bring several cups of water to a boil in a small pot. Place chopped potatoes, carrots, and onion in the boiling water, and cook for about 10 minutes, or until vegetables are tender and soft enough to blend.
3. When veggies are soft enough to blend, use a slotted spoon to remove them from cooking water, and place them in your blender. Add ¾  cup of that cooking water to your blender, along with your remaining ingredients.
4. Blend until smooth. A Vitamix does the job well.

Ingredients

2 medium potatoes (russets work better)
1 small carrot
1/4 of a small onion
1/2 cup of raw cashews, soaked
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of salt
1 cup of water
