Description

Want a quick and easy soup to warm your tastebuds in the cold weather? Here it is – Carrot soup. Beware, this can become your favorite soup too!

Method:

1. In a pot, mix 2 cups of water, carrots, onion, and oats over medium heat.
2. Bring them to boil and then reduce heat to medium. Continue
to cook until oats are cooked and carrots are fork-tender, about 5 to 6minutes. Stir once or twice to prevent sticking the pan.
3. Transfer to blender and mix with non-dairy milk. Blend until smooth and creamy, adding  extra  non-dairy milk if needed.  Add in ground ginger, allspice, salt and pepper and blend for another 10 to 15 seconds.
Serve with side of roll or vegetables or both.
Servings: 2

Ingredients

1 pound carrots, peeled & sliced
1 small onion, chopped
1/4 cup traditional rolled oats (uncooked)
1/2 cup unsweetened almond or soy milk
1/4 tsp ground ginger
1/4 tsp allspice
1/4 tsp salt (optional)
1/4 tsp ground pepper (optional)
2 cups of water
