Description

While our newfie mudder Marguerite O’Brien has her ways to lure us into her sweetness by coming up with this recipe, our Gift of Health support group member Brenda has her ways to  start our support group meetings with Carrot Energy Bites. Beware…they are very addicting!

Method:

  1. Add all ingredients except shredded coconut in food processor and pulse until combined.
  2. Form into 1 inch balls and roll in coconut.
  3. Put on baking sheet lined with parchment paper. Put in fridge or freezer in airtight container.

Ingredients

1 cup grated carrot or thinly sliced
3/4 cups walnuts or almonds
1/4 cup hemp seeds
1/4 cup honey or maple syrup
6 dates
1 tsp vanilla
1 tsp cinnamon 1/4 tsp nutmeg
1/2 cup unsweetened shredded coconut for rolling
