Description

When it comes to quick fix meal, brunch or breakfast, this one tops our list. It takes 5 minutes to prepare the batter and fillings.

Method:

In a mixing bowl, whisk together the  flours and flaxseed meal. Make a well in the center and pour in the wet ingredients (milk, apple sauce, vanilla extract). Mix them well and let the batter sit for few minutes. It will thicken a bit. Add some water to loosen it up for runny consistency (upto 1 cup of water)

Meanwhile, heat a nonstick skillet on a medium heat. Pour batter with a laddle into center of the pan and swirl to spread evenly. Cook until the top appears dry (30 to 45 seconds). Loosen the edge with a flat spatula and quickly flip. Cook for another 10 seconds.

Slide crepe onto a plate. Fill the center with the choice of your cut fruits.Here’s a few we like: Banana, cantaloupe, grapes, Bosch pear and papaya. Pour little banana sauce over the fruit and Fold the edges onto the center. Drizzle some banana sauce over the folded crepe. Delicious!!!

 

 

Ingredients

1 cup buckwheat flour
1 cup brown rice flour
2 cups plant based milk (Almond/Soy milk)
2 Tbs flax seed meal
2 Tbs unsweetened apple sauce (optional)
1 tsp vanilla extract
pinch of baking powder
For Banana Sauce:
2 bananas
1/2 cup Soy or Almond milk (any plant based milk)
For filling:(all or some)
your choice of chopped fruit
bananas
bosch pears
mango
cantaloupe
grapes
papaya
