Description

Another wonderful recipe by Sylvia Smith – Tofu Egg salad

Method:

  1. Place tofu in a large bowl and press with the fork to break up into small pieces.
  2.  Add the mayo, mustard, pickles, onion, turmeric, salt and pepper and stir to combine.
  3.  Often this salad tastes better the next day.
  4.  Fill your bread with condiments, tomato, and lettuce and top with tofu egg salad.

Ingredients

1 block extra firm tofu (drained)
1 Tablespoon GOH Mayo
1 Tablespoon regular or Dijon mustard
2 sweet pickles chopped
1/4 cup red onions finely diced
1/2 teaspoon turmeric
salt-and-pepper to taste
