Palak Mushroom (Spinach with Mushroom)

Description

Palak Mushroom is a thick and creamy spinach cooked with spices and mushrooms. It is one of our favourite curries. It can be served with rice or roti (Indian Bread)

Prep/cooking time: 30 minutes
Servings: 5-6

Method:

  1. Blanch spinach in boiling water for 7-8 minutes.
  2. Add 1/2 teaspoon of sugar to water to prevent discolouration (optional).
  3. Keep the water in which spinach is boiled aside.
  4. Make a purée of spinach along with cashews in a blender/mixer/grinder and keep it aside.
  5. Blanch mushrooms in hot water for 8-10 minutes.
  6. In a saucepan, dry roast cumin seeds and let them splutter.
  7. Add onions, salt, garlic, ginger and chilies. Let them cook for 3 minutes.
  8. Add the spinach purée. Mix in the coriander powder, cumin powder, kasuri methi and garam masala. Cook for 8-10 minutes.
  9. Add 160 ml (2/3 cup) of water (use water that was kept aside). Stir it intermittently.
  10. Add mushrooms and chopped coriander leaves. Stir them, cover with a lid and let it cook for 2 minutes.
  11. Add water (if necessary) to avoid sticking to pan. Cook for another 2-3 minutes.
  12. Transfer to a serving bowl and enjoy.

Ingredients

4 cups of spinach (palak) (6 ounces or 180 grams)
7 ounces of mushroom (7 ounces or 200 grams)
3-4 green chillies, finely chopped
2 teaspoons of ginger, chopped
4 cloves of garlic, chopped
1/2 teaspoon of cumin
1 tablespoon of coriander leaves (cilantro), chopped
1 small onion, chopped
1/2 teaspoon of salt
1/4 teaspoon of garam masala
1/2 teaspoon of kasoori methi (dried Fenugreek leaves) (optional)
10 cashews
1/2 teaspoon of coriander powder
1/2 teaspoon of cumin powder
