Who says you cannot have meatballs on a plant-based diet? Be ready to be tantalized by this recipe from Shirley Murley. Without further ado…

Method:

To prepare the meatballs

  1. Boil 4 1/2 cups of water.
  2. Add rolled oats to the boiling water and cook for 5 minutes.
  3. Add soy sauce.
  4. Stir in nutritional yeast, onion powder, garlic powder, Italian seasoning. Mix them well.
  5. Preheat the oven to 350°F.
  6. Let the mixture cool a little bit and roll them into balls.
  7. Place them on a parchment paper/cookie sheet.
  8. Bake for 15 minutes on each side.

Once done you can either use them immediately or store/freeze them for future use. I usually prepare a big batch and store them.

To prepare the sauce:

1. Combine all the ingredients listed under sauce and heat on the stovetop for a few minutes.
2. Pour the sauce over the meatballs and bake for 45 min at 350°F.

Tips:
You can double the recipe for Marinara sauce if you are using/serving all of the meatballs.

 

Ingredients

For the Meatballs:
4 1/2 cups of rolled oats
1/2 cup of soy sauce
1/4 cup of nutritional yeast
1 teaspoon of onion powder
1/4 teaspoon of garlic powder
1/4 teaspoon of Italian seasoning
4 1/2 cups of water
For the Marinara sauce:
1 cup of ketchup
1/2 cup of brown sugar
1 teaspoon of chili powder
1 teaspoon of onion powder
1/4 teaspoon of liquid smoke
1/2 cup of water
