Description

As kids, this used to be our favorite dish. Usually, okra is deep fried in oil. We were wondering how to bring the same crispiness without using oil. Voilá, here it is…

Method:

  1. Thaw the frozen cut okra and discard any excess water.
  2. Place it in a microwave-safe bowl and microwave it for 10 minutes. You will notice that okra becomes dry and less slimy. If you are using fresh okra put a lid on the bowl and microwave it for 15 minutes, until the okra turns tender.
  3. Heat a saucepan over medium heat. Add yellow gram, black gram, mustard seeds and let it splutter. Add the curry leaves.
  4. Add onion and garlic and let it saute for 2 minutes.
  5. Add salt, turmeric, paprika and sauté it for another minute.
  6. Add microwaved okra and stir it. Sauté it for another few minutes. Garnish it with shredded coconut and chopped cilantro. Turn off the stove. Enjoy!

Ingredients

1 pound of bag of frozen cut okra or fresh okra, diced
1 medium onion, chopped
2 garlic cloves, crushed
1/4 teaspoon of salt or to taste
1/8 teaspoon of turmeric
1 teaspoon of paprika
1 tablespoon of shredded coconut
1 tablespoon of chopped cilantro
For tempering:
1/4 teaspoon of yellow gram
1/4 teaspoon of black gram
4-5 curry leaves
