Fried Okra

  • recipe image cover

As kids, this used to be our favorite dish. Usually, okra is deep fried in oil. We were wondering how to bring the same crispiness without using oil. Voila, here it is…

  1. Thaw the frozen cut okra and discard any excess water.
  2. Place it in a microwave-safe bowl and microwave it for 10 min. You will notice that okra becomes dry and less slimy. If you are using fresh okra put a lid on the bowl and microwave it for 15 min until okra turns tender
  3. Heat a saucepan over medium heat. Add yellow gram, black gram, mustard seeds and let it splutter. Add the curry leaves
  4. Add onion, garlic and let it saute for 2 mins.
  5. Add salt, turmeric, paprika and saute it for another min.
  6. Add microwaved okra and stir it. Saute it for another few mins. Garnish it with shredded coconut and chopped cilantro. Turn off the stove. Enjoy!
