Description

Rosa Moulton introduced us to this simple yet delicious salad. It goes well with any side dish. You can adjust the quantity of vinegar and sweetener to your liking.

Method:

Combine all the ingredients and you have a wonderful salad in a jiffy, plus an instant crowd pleaser!

Ingredients

2 English cucumbers, sliced
1 pack of cherry tomatoes, sliced (around 20)
2 cups of cooked chickpeas (or canned)
1 avocado, chopped
Fresh chopped dill, to taste
1/4 cup of apple cider vinegar
2 tablespoons of agave/maple syrup
Salt and pepper to taste
